I could have stuck to my normal “for lack of a better option” dinner ideas, such as simple poached eggs (thanks to Jenna’s great tutorial), some sort of pasta, or heck, even Trader Joe’s frozen Tikka Masala (it’s quite delicious), but I had been there, done that quite recently. On a chilly fall day, this is my go to dish. I made it exactly as stated in the recipe. Loved by the kids and adults. I knew it would be wonderful because every recipe that I’ve made from the OUAC website has been great. It was still mild but very tasty and so easy. Red curry paste should work – no tweaks needed. With the leftover green curry paste, I added some mayonnaise, sour cream, and lime juice to use as a dressing on tomorrow night’s dinner. Remove excess fat and giblets from the chicken and discard. Many Asian recipes have a daunting list of ingredients and are very labor intensive. It worked out great especially since I didn’t quite have 2 cups of chicken leftover.
