Preheat grill. Soften butter and mix with honey. This version can be done on the grill in less than 30 minutes! Spread mixture over slices and turn. Grease the cut side with butter, margarine or oil, and add any seasonings you prefer, like salt and pepper, or cinnamon and nutmeg. Cut into 1/2-inch slices. —Norma Conley, Richmond, Kentucky Tightly wrap the half in heavy duty aluminum foil and bake it on the grill for about 50 minutes. Large sweet potatoes may require more cinnamon-sugar topping ingredients. Continue grilling until the honey butter gets all bubbly. Turn and spread on more honey butter. Before baking sweet potatoes on the grill, preheat the grill to medium. Place on medium hot grill and cook for about 8 to 10 minutes on one side. Bake: Spread the sweet potatoes evenly onto a baking sheet (I like to line mine with aluminum foil for less mess) and bake for about 20-30 minutes, or until they’re fork tender. Season Potatoes: Add the sweet potatoes to a large bowl and toss them with the olive oil, brown sugar or honey, cinnamon and salt. Add more mini marshmallows before serving if desired. Then, wash the sweet potato and cut it in half lengthwise. Continue grilling for about 6 to 8 minutes. Clean sweet potatoes, cut off any bad spots. I absolutely love sweet potato casserole and can hardly wait until the holidays to begin baking it.
